How to prepare
Raw, cooked or bake. You can eat them raw in a salad, or use a peeler to make very thin slices and eat as a carpaccio with a bit of olive oil on top, salt and pepper. You can also serve them as raw spaghettis (cut very thin long laces) served with a pesto. You can do a gratin or stuff them with minced beef and tomatoes. You can do a soup if you boil them with potatoes and onions. Courgette fritter is also a wonderful way to eat them.
Delivered from our farm, so wash before cooking but keep dry until then. Best kept in the fridge, wrapped in a kitchen towel.
