Easy corn fritters
You will need:
2 ears of fresh corn
4 Tbsp all purpose flour
1 Tbsp fresh herb of your preference (I like thyme or chives)
1 egg
salt and Kampot pepper
vegetable oil for frying
Instructions:
1- Remove the kernels from the ear and wash well. Drain.
2- In a mixer add 1/2 the corn, egg and flour and blend until smooth.
3- Pour in a bowl and mix the rest of the corn kernels and herb and season with salt and pepper.
4- Heat a large skillet in medium heat. Add oil enough the cover the bottom of the skilled.
5- When the oil is hot, add the fritter mixture (around 2 table spoons per fritter) and cook until golden. Using a spatula turn the fritter and cook the other side and repeat the process.
6- Remove from the skillet and transfer to a plate with kitchen tower to remove the excess oil. Repeat with the remaining mixture.
Serve warm and Enjoy !
