Mango Avocado Salad

Ingredients

  • 1 ripe avocado
  • 1 mango
  • 1 red onion
  • 1 lime
  • 100 g feta cheese
  • 50 g cashew nuts
  • 1 handful of arugula (rocket)
  • Salt and pepper to taste
  • Olive oil 

 

Preparation  (20min)

  1. Dice the avocado and mango, and place them in a large salad bowl.
  2. Finely slice the red onion and add it to the fruits.
  3. Add a handful of arugula for a fresh green touch.
  4. Cut the feta into cubes and gently fold it into the salad.
  5. In a small bowl, mix the lime juice, olive oil, salt, and pepper to make the dressing.
  6. Pour the dressing over the salad and gently toss to coat all ingredients.
  7. Finish with the cashew nuts for a delightful crunch.
  8. Serve immediately and enjoy this burst of flavors!
