Organic Lettuce (Thailand)

How to prepare
Eat your lettuce with a simple vinaigrette or just some olive oil, salt and pepper. As it comes straight from the farm, make sure you soak it for 10 minutes with 2 tbsp of white vinegar. This will clean it and remove any bugs (they are organic so the occasional snail might be there. If you happen to find one, be nice and share a leaf of lettuce with it: it only speaks Thai and is probably in panic mode!).
How to store it?
After soaking your lettuce for 10 minutes, rinse it and dry it well - really well. Take a t-towel and put some leaves at the bottom and across the towel, then roll it, do another row of leaves, roll it, another row, roll it, etc. If you do this well, you should be able to keep them for up to 5 days in the lower part of your fridge.
