Greek salad with grilled pineapple

You will need
1 pineapple, peeled, cored and sliced to 2cm rings
1 cup cherry tomatoes, halved
1 red onion, sliced and soaked in ice water
1.5 cups cucumber, sliced and chopped into quarters
1/2 cup feta cheese, crumbled (or cut in cubes)
2 cups of green salad of your choice
Olive oil to brush the pineapple
For the vinaigrette:
1/4 cup olive oil
juice of 1/2 lemon
1 tsp dried oregano
Salt and Kampot pepper
1 – brush both sides of the pineapple with olive oil. Heat a grill (or a skillet) and grill the pineapples on both sides, until golden brown. Remove from the heat and let rest.
2 – prepare the vinaigrette: mix all ingredients and whisk well until creamy.
3 – cut the grilled pineapples in cubes and drain the onions well.
4 – in a large bowl combine the pineapples, cherry tomatoes, onion, cucumber and the green salad. Add the vinaigrette and mix.
5 – top the salad with the feta cheese and serve.
