Baked apples stuffed with oatmeal

Ingredients:

  • 1 cup organic Medjool dates, pitted
  • 1 cup raw almonds
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions:

1. Preheat the oven to 200°C and position the oven rack in the lower-middle part.

2. Remove the core of the apples, leaving about 1/2 inch (1.3 cm) from the bottom.

3. In a bowl, mix together brown sugar, oatmeal, cinnamon, nutmeg, cloves, and other additional ingredients. Make sure everything is well combined. Fill each apple with this mixture, pressing it down firmly.

4. Place the apples in a baking dish. Put a small piece of butter on top of each apple. Pour some water into the bottom of the dish. Loosely cover the dish with aluminum foil.

5. Bake the apples for 20 minutes, then remove the foil and continue baking for an additional 20 to 30 minutes. The apples should be soft, and the brown sugar should have melted and formed a syrup-like consistency. 

6. Serve the baked apples with a scoop of ice cream or crème fraîche.
