Bok choi salad with peanut dressing

You will need

4 cups bok choi, thinly sliced
1/2 cup spring onions, chopped
1 cup cooked chicken breast, shredded
1/4 cup fresh cilantro leaves, chopped
1/2 cup toasted peanuts, roughly chopped

For the dressing:
1 juice of lime
1 Tbsp peanut butter
1 Tbsp soy sauce
1 Tbsp honey
1 tsp fish sauce

1. Mix all the dressing ingredients and stir well, until creamy.
2. In a large bowl combine the bok choi, spring onions, chicken breast and cilantro.
3. Add the dressing and toss well.
4. Serve sprinkled with toasted peanut
