Carrot and cucumber salad with creamy tahini dressing

You will need:

2 carrots, peeled and cut in match stick size or grated
1 cucumber, cut in match stick size or grated
1/2 cup fresh mint leaves, washed and chopped
1/2 cup fresh spring onion, washed and chopped


For the creamy dressing: 

2 Tbsp tahini
2 Tbsp water
1 Tbsp lemon juice
zest of 1 lemon
salt and Kampot pepper



1 – make the dressing: in a bowl mix together all the ingredients and whisk well until creamy;
2 – in a salad bowl mix all the salad ingredients;
3 – pour half the dressing and mix. Serve the rest of the dressing on the side.
