Papaya and Passion fruit sorbet

You will need: 

2 ripe bananas, peeled and frozen
3 cups ripe papaya flesh, frozen
1 passion fruit
(optional) juice of 1/2 lime
seeds of 1 passion fruit to garnish


1. A day before: 

Cut the papaya in half and remove the seeds. Using a spoon, scoop out the flesh from the papaya and freeze for a couple of hours. Place the bananas in the freezer and leave them over night.

2. Place the frozen papaya chunks, your frozen bananas (broken into pieces) and the interior of 1 passion fruit in a food processor or blender and process until smooth. Taste and feel free to add sweetener or lime juice to your liking. 

3. To add some “crunch” and texture, spoon the seeds of one passion fruit on top.
