Description
Beautiful purple-and-white striped heirloom eggplants with a thin, tender skin and creamy, sweet flesh. Some of famous heirlooms varieties are:
- Listada de Gandia (Spain) – one of the oldest and most famous heirloom striped eggplants.
- Rosa Bianca (Italy) – heirloom, rounder, lavender and white.
- Violetta di Firenze (Italy) – heirloom, larger and lightly striped.
- Zebra or Striped Toga – other striped heirloom varieties.
How to prepare
Grill, bake or fry this versatile vegetable. Do not peel the skin as there are many nutrients there. Just wash, chop and cook!
Note that most of the times, the eggplants you will receive will look like the ones on the first picture, but occasionally it might be some looking like the ones on the second picture: depends which variety the farm will have grown. :)
