
French bean, tomato and couscous salad for a quick lunch!
Ingredients:
- 1/2 cup uncooked couscous
- 1/2 cup water of vegetable stock
- 1/2 cup cherry tomatoes, cut in half
- 200g French beans
- 1 tablespoon fresh mint leaves, chopped
- 1 tablespoon spring onion, chopped
- 1/2 tablespoon olive oil
- salt
For the dressing:
- 1/4 cup olive oil
- 1 tablespoon balsamic vinegar
- salt and pepper
Instructions:
1- Bring a small pot of salted water to boil. Clean the French beans, remove the ends and cut in 2 cm. Once water is boiling, cook the French beans for 2 min, drain and cool in an ice bath. Drain well.
2 - Make the dressing by mixing all the ingredients well. Season the tomatoes and French beans with the dressing and let marinate while you prepare the couscous.
3 - Bring the vegetable stock (or water) to boil. Add the couscous, cover with a lid, turn off the heat and let the couscous absorb all the water for 10-15 min.
4 - Once the couscous is ready, season with olive oil and salt and fluff with a fork.
5 - Mix the couscous with the marinated tomatoes and French beans (add any remaining dressing), transfer to a bowl and serve topped with fresh mint leaves and spring onions.
